Mike’s Tomato Sauce / Base
Ingredients
2 tins of ‘Mutti’ tomato sauce3 banana shallots finely chopped1 medium red chilli – finely chopped (optional)Large glug of extra virgin olive oilLarge sprig rosemary – finely chopped4 cloves of garlic – crushedSplash white wineSalt and pepper to season at the end
Method
In a pan add the oil, shallots and sweat on a medium heat without colouring. Add the garlic, chilli and rosemary and cook for 1 further minute. Add the white wine and cook off for two minutes, then add the tomatoes and cook down for around 1 hour. Season to taste.
This sauce can be be then stored / frozen in batches and used as sauce base for pizza, bolognaise sauce, meat balls and many other dishes.
Mike’s Green Sauce
Ingredients
Roughly chopped Rocket, Coriander, flat parsley, Mint and Basil (Big handfuls, you can use what you have available and in the spring can pick wild garlic and use this)1 x banana shallo finely chopped2 cloves of garlic – crushed and finely choppedZest and juice of one lemonSalt and pepperLots of extra virgin olive oil
Method
In a bowl add the roughly chopped green leaves together with the garlic, shallot and lemon zest. Add the lemon juice and plenty of olice oli and mix to make a thick green sauce. Season with plenty of salt and pepper and you have a delicious condiment that can again be batched and frozen and used with pizzas, many venison dishes.
