Venison and Wild Boar Bacon - Back in August

We are convinced that Wild Venison (which includes Wild Boar) can and should be enjoyed all year and at any time of day…….! Now we are fully up and running at our Ramsbury HQ we couldn’t resist the temptation of making Wild Boar Bacon and then we thought….why not Deer as well? We are so pleased we did as both are tremendous and although for many there will always be a place for “normal bacon”, these products are taste sensations.

We use a traditional “Dry Cure” method so not brining, each cut is trimmed and them coated in the appropriate quantities of dry cure rub before being vacuum sealed and refrigerate for the correct curing time. Afterwards, it is thoroughly washed and then air dried for 5 days when its ready for either the further process of a 6 hour cold smoke or slicing and packing.

The best way to describe the Boar Bacon is a fuller pork flavour, firm texture and delicious fat which should be kept after cooking to be used for other cooking. The venison Bacon is well….something else…..very tender, melt in the mouth and a mild and sweet full flavour, not strong at all.
