The Miserden Estate have been working with the Royal Agricultural University for the last 30 years to actively manage low-input wildflower grassland through conservation grazing with cattle. These limestone grasslands are an extremely rare and valuable habitat – the Cotswolds has lost 96% of its limestone grassland since the 1930’s, but what’s left represents over 50% of the UK’s total.

Grazing through the winter, their small heard of Belted Galloway cattle play a vital role in controlling dominant species and maintaining diversity within the sward, promoting the conditions for wildflowers which in turn support 28 different species of butterfly present on the estate. Originating in the harsh upland climate of the Galloway hills in beautiful south west Scotland, the Beltie is well-equipped to thrive outdoors in any climate. This remarkable animal is slow to mature, which means its beef has a special flavour and texture which is the envy of many other breeds. The cows live far longer than other cattle often well into their twenties, producing more calves and reducing replacement costs.

Once the carcass’s arrive at Deer Box in Rambury, we place them in our dry ager for 40 days to mature and allow the distinct flavours of this purely grass fed beef. We utilise the whole carcass and are not buying in just the premium cuts in boxes (which is practised by most butchers). After dry aging we cut, vacuum seal and freeze to preserve the freshness so that you can conveniently enjoy that perfect steak as and when you want it.

Liz and John Brunskill have a breeding herd of Traditional Hereford cattle grazing on their pastures. As a conservation farm they are working hard to maintain their bloodlines and increase the numbers of the breed, at present they have in the region of 100 cattle.

Their cattle and flock of Badger Face Welsh Mountain sheep are raised naturally and graze on the farm all year round. These native breeds are ideal for our herb rich pastures. During the winter months they are supplemented with the best home produced hay, resulting in the best meat you will ever taste.

Because traditional breeds grow more slowly than modern breeds, so the meat develops a better, more distinct taste, a characteristic recognized by many leading chefs. Nor do they need growth promoters, hormones and routinely fed antibiotics that give so much cause for concern. Not only does the meat taste so much better, but this way of farming makes for happier more contented animals.
