Wild Boar T-Bone Chops
Chops are essentially the same meat as the loin, extremely tender and flavoursome but keeping the bone in can add that bit of extra flavour and moisture especially when cooking on the barbecue. Wild Boar is particularly good when served on the bone.
The wild boar is an omnivorous mainly nocturnal animal closely related to the domestic pig. It was exterminated from the British Isles in medieval times. Wild boars were imported from the Continent for meat farming in the 1980s, and escaped animals established themselves in the wild in the early 1990s. On the Continent, wild boar cause significant damage to agriculture, as a result the wild boar can be harvested all year round. There are several populations recorded within the UK, all of our Boar are sourced from the Forest of Dean.
As a meat, Boar is a cross between pork and venison with a mild flavour and relatively lean, the meat is slightly firmer than venison. Wild Boar can carry Trichinella which can effect humans so all the Boar we take are tested and cleared for this. Unlike pork it is totally safe and acceptable to eat Wild Boar Pink, as it is a wild animal free ranging it is not subjected intensive systems.
Our T-Bone chops are generously cut 1” thick in packs of 2, the size of the pack will vary depending on the species and the weight of the animal when harvested.
