Our Sika Deer are from Managed Estates in south Dorset. Sika is regarded as one of the finest Venison meats with a slightly higher fat content which provides further richness and flavour. Sika Pave Steaks are taken from the haunch / back leg and are very tender and lean. Simply season and then grill, fry, BBQ or if your feeling adventurous cook over a wood fire for a couple of minutes each side before resting. Pave are best served pink.
