The Tenderloin or fillet is regarded as the softest and most tender venison cut, dense tender meat which can grilled, fried, BBQ or cooked over open flames. The equivalent on a beef animal is the fillet however on a deer they are very small, so cooking time needs to be minimal as they will overcook.
Our clever butchers at DeerBox have been thinking about how to best utilise this fantastic cut so that it is easier to cook more consistently…..and….well we have a solution!! By using a very clever product call transglutamase we are able to fuse 6-10 tenderloins together to create one large fillet. We then cut these 1 - 2” thick to create a “fillet steak” perfect for one serving which can be cooked in a pan, under a grill or on the BBQ.
