Sika Deer - Wild Venison Haunch - Boned and Rolled Roasting Joint
Fancy something different to a Sunday Roast?! Venison Haunch can be cooked pink and is a wonderful roast that can be enjoyed by all the family. Allow 150 - 200g of meat per person when calculating size of roasting joint to order.
Cook like a conventional red meat in the oven (a temperature probe is handy, for medium rare an internal core temp of 60 - 65 degrees Celsius is recommended) and make sure you rest the roasted joint for a good 20 - 35 minutes before serving.
Sika Deer is often regarded by chefs as the king of deer for flavour and are a richer fuller flavour and have a layer of fat running over the haunch and through the muscles which will help retain the juices and add flavour. Size of haunches are bigger and will range from 1.5 to 3KG.
